Day 3.15: Colorado Springs, CO to Denver, CO

We woke up – not too early – and went to The Urban Egg with Adina, which was just a short walk from her apartment. Abe ordered the cinnamon roll pancakes, Arielle got chocolate chip pancakes with a raspberry drizzle, and Adina got eggs and potatoes. Everything was delicious and it was nice to eat outside.

We returned to the apartment, where Arielle had a work call while Adina went out briefly. When she got back, we drove about twenty minutes and went adventuring in Colorado Springs. We stopped at multiple ice cream places, including one that sounded great but far too overwhelming called Frozen Gold, and ultimately Abe was the only one who got anything. We walked around downtown with Arthur, and Adina was concerned at one point that Abe was going to let him go when he offered to hold the leash (don’t worry, he didn’t). Adina got a smoothie before we left to drive back to the apartment and hang out a bit with Matt. We said goodbye to our hosts and got on the road for Denver.

Fortunately, we didn’t hit too much traffic, and made it to Pho on 6, a Vietnamese restaurant known for its vegetarian pho earlier than we expected. We met up with our friends Jeff, Talia, and Yona, and were pleased that the pho was huge and pretty tasty. Abe’s Szechuan Garlic Tofu took forever, as did the edamame, but they were both very good when they finally came out. We followed them back to their home and brought some stuff in. We hung out in their awesome basement room after Yona went to bed until the adults got tired too and we all went to sleep.

Approximate number of miles covered: 79
